TURKEY WITH MLINCI TRADITIONAL TURKEY WITH THIN DRIED FLATBREAD

From north to south and from east to west, each region of Croatia has its own special culinary personality that will surprise you. One of Croatia’s most famous continental delicacies is definitely turkey with mlinci, a thin dried flatbread. Ingredients: 1 turkey (approx. 3000g); 500g of mlinci; Oil; Salt Before starting, rinse the turkey well, dry it and salt it well both inside and outside. Leave the well-salted turkey to “rest” in a cool place for 4 hours. Then place the turkey on a greased baking pan, rub the turkey all over with oil and roast in a pre-heated oven at medium heat of 180 - 200 C. The turkey has to be roasted for 2,5 - 3 hours, during which time you should baste the turkey with the pan juices to achieve a crispy skin. Once the juice from the baking pan evaporates, add some water to prevent burning and continue to pour it over the turkey until it’s done. In order to prepare mlinci you need to break them into smaller pieces, put them in a pot and poor boiling salted water over them. Cook them for approximately 5 minutes or until they soften, then rinse them and drain well. Once they are done,

you can pour what’s left of the turkey sauce over them.
